Stagier Bar scores 4.7 on Google. The name refers to an apprentice in high-end gastronomy — a lovely understatement for what's offered here.
Three men at a small table. Only 5–7 tables, open kitchen, one young woman on service, two masters at the stove. We ordered the tasting menu.
For 60 euros they fire off a firework of flavours and textures! The tomato tartare was a knockout. Outstanding: the foie gras as signature dish — less is more, delicately seasoned with fresh chives.
The chefs trained in South America and Spain's most exciting culinary regions: Basque Country, Valencia and Catalonia. You can taste it.
The slow-cooked wagyu was delicious, but the absolute highlight was the sauce — an explosion of the finest aromas.
